USC Unveils New Quick-Service Eatery, The Cove

LONDON, Ontario, December 9, 2025 – The University Students’ Council (USC) at Western University is thrilled to announce the launch of The Cove, a brand-new, quick-service eatery. Located outside The Wave in the University Community Centre, The Cove brings together favourites from both The Spoke Cafe and The Wave in a made-to-order space, designed with students’ evolving needs in mind.
“We’re launching The Cove because students deserve food and beverage options that truly match the pace and rhythm of their day,” said Kathleena Henricus, USC President. “When students choose The Cove, or any USC operation, they’re not just grabbing a meal; they’re investing directly back into their own student experience. Every purchase helps fund USC programs, services, and supports that make campus life better.”
The Cove will feature almost the entire Spoke Cafe menu and Wave menu items to go, offered with the same quality and care students expect from USC operations. With its efficient service model, The Cove maintains the USC’s commitment to great food and exceptional service while meeting the growing demand for faster, high-quality and affordable dining options on campus.
“By creating a dedicated grab-and-go location, we’re helping relieve pressure on The Spoke and The Wave during peak hours, reduce line congestion, and improve overall service speed across our operations,” said Mark Leonard, Senior Manager, Hospitality Services, USC. “The Cove allows us to better maximize underused space while continuing to meet demand which ultimately means a smoother, more efficient experience for customers.”
So whether students, faculty, or staff are looking for a buffalo wrap between classes, a Spoke feature drink to get through the day, or a quiet place to recharge, The Cove is positioned to become a new staple in the daily routines of Western’s campus community.
The Cove will operate weekdays from 10 a.m. to 7 p.m. beginning early January 2026, with the grand opening planned for the end of January.
